It would be easiest perhaps to grab something unhealthy, get take out, or make some microwave nuked dinner of some sort after we get home tired from work. I just can’t bear the thought of spending a lot of money and being unhealthy so I devised quick dinner food that’s healthy AND easy to cook. And the best part? It’s always MUCH cheaper for us to cook at home than to eat out! Additionally, I usually make enough so that we have our dinner and lunch for the day after. That way, our food budget really stretches.
One of my husband’s favorite quick dinners that I make is Garlic Crab Noodles. From start to finish, I can make this thing in less than 20 minutes and it’s super dee-lish!
1 package Whole Wheat Spaghetti noodles
1 16 ounce container of Lump Crab meat
8-12 cloves of fresh minced garlic (the more garlic, the better!)
1/3 cup of sliced sweet onions
1/ 3 cup of chopped green onions
1/4 cup of chopped cilantro
2 tsp of fish sauce
4 tsp of oyster sauce
4 tsp of rice wine vinegar
2 tsp of agave nectar
1/3 cup of vegetable stock
1/3 stick of butter
1/4 cup of fresh parmesan cheese
1/3 cup of French’s fried onions for garnish
red chili flakes for garnish
salt and pepper to taste
1. In a pot of boiling water, cook the spaghetti noodles and set the timer for 7 minutes. The noodles should cool al dente. Drain the noodles of excess water and set aside.
2. Combine the fish sauce, oyster sauce, rice wine vinegar, agave nectar and vegetable stock in a small bowl.
Mix it completely and set aside.
3. Sautee the garlic and the sweet onions in the butter. Add the sauce you’ve set aside once the onions and garlic are nice and caramelized. Once it’s nice and warm, throw in the green onions and the cilantro.
4. Mix the whole wheat spaghetti pasta in to the pan and mix thoroughly. Add the lump crab meat and season with salt and pepper. Add the parmesan cheese and the chili flakes. Finish with a healthy serving of fried onions and serve.
